For us Pinoys, no meal is ever complete without rice. If serving during the holidays, add a few vegetables to everyone's favorite mealtime staple to punch up the flavor and give the dish a welcome pop of holiday hues.
Serves 4 to 6 Prep Time 10 minutes Cooking Time 5 minutes
1/4 cup butter
1/2 cup finely chopped onions
1/2 cup finely chopped celery
1/2 cup chopped red bell peppers
1/2 cup chopped green bell peppers
3 cups cooked rice
salt and pepper, to taste

1 In a large sauté pan, melt butter. Sauté onions and celery until onions are translucent. Add bell peppers and continue to cook until vegetables are tender.
